"It's the most wonderful time of the yearrrr"-well second to football that is! But the Crawfish are in season! These wonderful seafood treat are in season and ready to be devoured. These are by far my favorite crustacea and one of my favorite foods in the seafood world. Being from Mobile, AL, there is a LOT of tradition and fun behind the season. There aren't too many foods that make families get excited and gather together to enjoy. Sure, a cookout is great-but it doesn't compare to a good 'ole Crawfish Boil!

Crawfish season officially begins in the Early weeks of March. That is usually when the weather begins to warm up during the south. Crawfish need warm water to breed, look at it like humans. What is the first thing men do when it gets warm? Go to the beach and find some tail! Same concept, so the warmer the winter, the more active the Crustacea, the better the season! Now I'm going to have to contradict myself on this current statement, and I'll explain it a bit later.
ALTHOUGH CRAWFISH SEASON BEGINS IN MARCH, I ADVISE TO NOT ACTUALLY BEGIN BUYING UNTIL APRIL OR MAY!!! June is always a good month as well, but as July comes-so do the smaller ones. Most suppliers actually end their shipments, and the ones who continue actually increase their price.

So, it's March 20th, and the average price around town is about $3.40-$3.60. THAT IS NOT CHEAP!
The best thing to do is to wait and check prices in April, May is guaranteed the cheapest and best time to buy. When the time is right, you can find crawfish for $2.30-$2.60 cooked, and $1.99-$2.30 alive. Think about it, it's simply supply and demand. When the season is early, demand is high-so the price is as well. As soon as a month passes, boom! .30 cents down. I literally check crawfish prices like stock! They've gone down .20 in a week, it's almost that time for a boil! What is there in this world better to spend $20 on than a couple of pounds of crawfish, ears of corn, sausage, and potatoes?! Don't worry... I'll wait..........................................................................
